Shetty and Sons Provisions

Mr. Shetty established his dried goods store on narrow, bustling Jewelers' Street in Bangalore, where you can still find men coaxing gold into intricate adornments to be worn, quite literally, from head to toe. Pravin, his son, sits here in the main room of their store. Off to the left, though, are two doors that lead to cool, dark rooms filled with scores upon scores of large burlap bags. In these rooms, you'll find aged basmati rice, black cardamom, three different kinds of dried red chiles, turmeric root dried to a golden yellow (above), and still moist knobs of gur (left), the rich, deeply flavored sugar obtained from palm trees. If you're a loyal customer, Pravin will let you sample a premium tamarind available only by special order one year in advance. A family harvests the extra-wide pods from a single tree, long known for the high quality of its fruit and sold only at Shetty and Sons.
