Drying cardamom

Bosewell's wife keeps careful watch of the cardamom in the drying room. Spread on wire racks and turned regularly, the pods dry for two days in a long, dark loft built over an old wood-burning stove. Hot air travels through the room in closed pipes for gentle, indirect heat--the best way to retain cardamom's bright green color. Less than 15 feet away from the stove is a cot for napping between collecting wood and tending the fire.
